In May 2021, during National Food Allergy Awareness Month, Katherine launches her first book, Katie Can't Eat Nuts. The story follows Katie's extraordinary life, revealing a strong and feisty girl who plays soccer, takes ballet, and happens to be allergic to nuts. Delightfully told with gorgeous illustrations and fun activities, Katie's story normalizes food allergies and enables families to discuss and confront food sensitivities. Katie Can't Eat Nuts realizes the power within each of us as Katie confronts self-limiting beliefs, showing readers what is possible through will and determination. Uplifting, informative, and spirited, Katie's story helps children with allergies feel accepted and confident.
As a child, Katherine suffered from a severe nut allergy and asthma. Throughout childhood, she encountered numerous occasions of anaphylaxis reactions, which worsened over time with some instances threatening her life.
As an adult, she developed additional allergies, auto-immune imbalances, and chronic illnesses, despite a "healthy" and active lifestyle of eating low fat and low-calorie foods and following longevity-building best practices. She saw a menagerie of doctors who dealt with her symptoms, yet none effectively managed her illnesses' underlying root causes.
And now, Katherine educates children, young adults, and professionals about health and wellness, allowing others to navigate health issues confidently. Her goal is to translate mysterious, often intimidating health concepts into accessible and relatable tips that reach beyond the plate and into every facet of life.
Katherine’s work provides meaning and optimism to life's challenges, helping others feel better, act kinder, and live easier. Her intention for creating this children’s book is to normalize food allergies for kids, along with their families, friends and communities. It is very important for Katie to help people know they're not alone, that they are allowed to be healthy AND have a food allergy.
